Apple Caramel Pie

My husband’s favorite pie is apple caramel pie from a local bakery in our small town. I haven’t figured out their secret pie recipe yet, so I went searching for a copycat recipe. The problem with trying to find a good apple pie recipe online is everyone has the “best apple pie” recipe. So, I decided to mix some different recipes, including Grandma Ople’s Pie Recipe, to make this pie and it turned out great.


Ingredients

  • 2, 9 inch pie crusts (I used Pioneer Woman’s recipe and only had one disc frozen so made it work)

  • 8 Granny Smith apples (cored, peeled, sliced)

  • 1 stick unsalted butter

  • 4 tablespoons flour (1 for the filing and 3 for the caramel topping)

  • A little less than 1/4 cup water

  • 1 tablespoon vanilla extract

  • 1 cup white sugar (1/2 cup for the filling and another for the caramel topping)

  • 1/2 cup brown sugar

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon all spice

Instructions

  • Start with your one pie crust and place in the pie pan.

  • Once your apples are sliced, place in a large bowl and mix in 1 tablespoon flour, 1/2 cup sugar and the cinnamon, nutmeg and all spIce and mix well. Then, pour the apples into your pie crust/dish.

  • Now, take your other pie crust and cut into strips and make a lattice design on the top. You want this kind of spread out so the caramel topping will drop into the filling.

  • Next, make your caramel topping: On the stovetop on medium high heat - melt your butter and add 3 tablespoons flour, water, vanilla, brown sugar and 1/2 cup sugar. Mix until everything is melted and is a dark brown color.

  • Now drizzle the topping all over the pie in between the lattice openings.

  • To bake, cook on 425 degrees for 20 minutes, then turn down to 350 and continue to bake for 45 minutes. (After the cooking time, I added foil on top and cooked for an additional 20 minutes to make sure the apples were softer.)

  • Let sit for 20 minutes so it will set up. Note this has the caramel drizzle so it is more liquidy than a normal apple pie.

  • To serve, cut a slice and top with vanilla ice cream and drizzle with sea salt caramel sauce.
