Betty’s Meatloaf

You typically don’t hear kids begging for meatloaf, but in our house it happens frequently. All thanks to this yummy family recipe, which is named after my mom. :) I’ve been eating this exact recipe since I was a kid and now when I make it, I always double the recipe because it doesn’t last long in our house!


Ingredients

  • 1 pound ground beef

  • 1 egg slightly beaten

  • 1/2 cup finely chopped white onion

  • 3/4 cup oatmeal

  • 1 8oz. can of tomato sauce

  • Salt and pepper to taste

  • Topping: 1/3 cup brown sugar, 1/4 cup ketchup and a little bit of water to make a paste for the topping.

Instructions

  • In a large bowl, mix the raw beef with the other meatloaf ingredients and start mixing well with your washed hands until it’s completely mixed together.

  • Next, move the meatloaf to a loaf pan. (When I double the recipe I use a 9x12 pan or two loaf pans.)

  • Now, mix all of the topping ingredients in a small bowl until all ingredients are completely mixed. I always eye this part and don’t follow the instruction since my family likes extra topping. I always just make sure the topping is more of a brown color or really dark red color instead of bright ketchup red color.

  • You can now transfer the topping and place on the top of the meatloaf.

  • Bake for an hour on 350 degrees and bam, the best meatloaf you have ever had.

  • Note: Make sure the middle is cooked well before you take the meatloaf out of the oven. I always cut it in the middle to make sure it’s cooked through and I usually put it back in the oven.

  • Note: If you make this in a 9x12 dish I typically cook longer than an hour and on 370 degrees.
