When I was in Italy, we ate this at basically every setting. This recipe is a tasty homemade version!
Ingredients
1 pint cherry or roma tomatoes, diced
1-2 shallots
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
1/2 cup chopped basil leaves
1/2 teaspoon salt
1/2 teaspoon dried oregano
4 cloves garlic
Spoonful of pesto (if desired)
1 baguette or mini crostini that you can buy at any store
Butter for the baguette: 1 stick salted melted butter, 1 teaspoon minced garlic, 1 tablespoon parsley
Instructions
Preheat oven to 375 degrees. Layout the baguette slices on a baking sheet and spread the butter mixture on both sides of the baguette. Cook for 5-7 minutes and flip sides halfway through.
Now, mix the rest of the ingredients in a small bowl.
Once the baguette is ready, top with bruschetta mixture and sprinkle with basil and fresh parmesan.
