Bruschetta

When I was in Italy, we ate this at basically every setting. This recipe is a tasty homemade version!


Ingredients

  • 1 pint cherry or roma tomatoes, diced

  • 1-2 shallots

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon balsamic vinegar

  • 1/2 cup chopped basil leaves

  • 1/2 teaspoon salt

  • 1/2 teaspoon dried oregano

  • 4 cloves garlic

  • Spoonful of pesto (if desired)

  • 1 baguette or mini crostini that you can buy at any store

  • Butter for the baguette: 1 stick salted melted butter, 1 teaspoon minced garlic, 1 tablespoon parsley

Instructions

  • Preheat oven to 375 degrees. Layout the baguette slices on a baking sheet and spread the butter mixture on both sides of the baguette. Cook for 5-7 minutes and flip sides halfway through.

  • Now, mix the rest of the ingredients in a small bowl.

  • Once the baguette is ready, top with bruschetta mixture and sprinkle with basil and fresh parmesan.
