Ingredients for Dressing
3/4 cup mayo
4 anchovies
1 teaspoon Worcestershire sauce
1 clove minced garlic
1/4 teaspoon Dijon mustard
1/2 or 1 lemon juiced
3 large room temperature egg yolks
3/4 cup olive oil
Splash of milk
1/2 cup grated Parmesan
Pinch of salt and pepper
Ingredients for Croutons
4 cups sourdough pieces
1/2 cup olive oil
3 cloves minced garlic
2 tablespoons fresh parsley
1/2 teaspoon salt and 1/2 teaspoon pepper
Instructions
Mix all dressing ingredients in a blender until completely mixed well. Let sit in refrigerator for at least an hour before serving - it will set up a bit so you will need to leave it out while making your croutons.
For croutons: Cut up your sourdough pieces in squares set aside.
In a skillet pan, let the garlic and oil cook on medium heat for around 5 minutes, then add your bread pieces and make sure each piece is covered in oil. Remove from heat.
Next, place croutons on aluminum foil topped baking sheet and cook on 375 degrees for 10 minutes.
Remove croutons from oven. Immediately add to your skillet pan or a separate bowl and mix in the parsley and salt and pepper until completely covered. Done!
Putting It Together
Use chopped romaine hearts and top with croutons, dressing and fresh parmesan. I also added breaded baked chicken to my salad for some protein.
