No-Bake Cheesecake with Graham Cracker Crust

Need a simple cheesecake recipe? This is the cheesecake recipe for you. I made the graham cracker crust from scratch, but you could buy a pre-made crust to shave a few minutes off this recipe (just use 2 packages of cream cheese instead of 3). This plain cheesecake recipe is perfect so everyone can pick out their favorite toppings!

Ingredients (Crust)

  • Graham Crackers

  • Melted Unsalted Butter

Ingredients (Filling)

  • Cream Cheese

  • Powdered Sugar

  • Vanilla

  • Heavy whipping cream

Instructions

  • In a food processor, pulse 2 packages of graham crackers and one stick of unsalted melted butter. (I was lazy and didn’t want to dirty additional dishes, so used my stand mixer and a meat pounder to crunch up the graham crackers.

  • Once your graham crackers are a good consistency for a crust, get a springform pan and put your graham cracker crust inside and shape in the pan - put the crust 1 inch up the side.

  • Now, you can make the cheesecake filling. In your stand mixer, mix three room temperature cream cheeses until smooth. Then, mix in around 2 cups of powdered sugar and 1 tablespoon vanilla and mix on high until smooth.

  • Next, mix in 1 cup of cold heavy whipping cream and beat until thick and fluffy.

  • Now place the cheesecake filling into your crust and refrigerate up to six hours.

  • To serve, use your favorite toppings and enjoy!
