Cornflake Potato Casserole

This recipe has been a family staple for a long time and I believe it was passed down from an old church cookbook - so you know this has to be good!


Ingredients

  • 2 pounds frozen cubed hash browns (somewhat thawed)

  • 1/2 cup chopped white onion

  • 1 can cream of chicken soup

  • 2 cups sour cream

  • 2 cups grated mild cheddar cheese

  • 1/2 cup melted salted butter

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • Topping: 2 cups crushed cornflakes with 1/4 cup melted salted butter

Instructions

  • Mix all of the ingredients except for the cornflakes in a big bowl until mixed thoroughly, place in a greased 9x13 inch dish.

  • Next, mix your cornflakes and melted butter in a dish then place the cornflakes on top of the potato mixture.

  • Bake on 325 degrees for an hour and dive in!
