Lemon Bars

I love lemon and these lemon bars are so easy from Simple Simon and Company! I use my stand mixer to make the crust and filling, which is less mess to pick up! Enjoy!


Ingredients for Crust

  • 2 sticks unsalted butter (I melt in the microwave for 30 seconds.)

  • 1/2 cup sugar

  • 2 cups flour

Ingredients for Filling

  • 6 eggs

  • 1 cup flour

  • 2 1/2 cups sugar

  • 1 tablespoon lemon zest

  • 1 cup lemon juice (I use the lemons I zested for the juice and will sometimes use bottle lemon juice to fill up the 1 cup. Use a mesh strainer to make sure the seeds don't get in your filling.)

  • Powdered sugar (to dust on top once the bars have cooled)

Instructions

  • Mix the crust ingredients in your stand mixer until they are in crumbles. Then, transfer the crust mixture to a 9x13 dish and use your hands to meld and press the mix into a crust. Cook on 350 degrees for 15 minutes.

  • While the crust is cooking, mix all of the filling ingredients in your stand mixer.

  • When the crust is done, pour the filling on top of the crust and cook for another 30 minutes at 350 degrees.

  • Once the lemon bars have cooled for 30 minutes or more, dust with powdered sugar and serve!
