Oreo Scratch Brownies

How about this mash up? Two of our favorite things equals one delicious dessert! I found this recipe from Baker by Nature and I will definitely be making it again.

Ingredients

  • 1 stick unsalted butter

  • 1 cup, and 1/2 cup for butter mixture

  • 3 tablespoons oil

  • 2 teaspoons vanilla extract

  • 2 eggs and 1 yolk

  • 3/4 cups flour

  • 1/2 teaspoon salt

  • 1/2 cup unsweetened cocoa powder

  • 3/4 cup semi-sweet chocolate chips

  • 14 Oreos

Instructions

  • Start by preheating your oven to 350 degrees and get out a 9x9 metal cooking tin. I covered the tin in aluminum foil and sprayed really well with Pam.

  • Start on the stovetop and get a saucepan out and melt the butter and a 1/2 cup sugar on medium heat - whisk until completely mixed. The mixture should be hot. Once it’s mixed well and hot, remove from heat.

  • Now add the oil and vanilla to the hot mixture and whisk well.

  • In a large mixing bowl, add the eggs, yolk and 1 cup sugar and whisk well.

  • Next, add your butter mixture to your mixing bowl in thirds, whisking after each addition.

  • Now, add the flour, salt and cocoa powder and mix just enough where the dry and wet ingredients are mixed - do not over mix!

  • Next, fold in the chocolate chips and about 7 crumbled cookies. I just loosley crumbled up the Oreos with my hands. Make sure these are folded in and covered by the mix.

  • Lastly, move the batter to the tin and take the remaining 7 cookies and loosely tear them apart and place them on top. Bake for 30 minutes, then let cool for 2 hours before cutting.
