How about this mash up? Two of our favorite things equals one delicious dessert! I found this recipe from Baker by Nature and I will definitely be making it again.
Ingredients
1 stick unsalted butter
1 cup, and 1/2 cup for butter mixture
3 tablespoons oil
2 teaspoons vanilla extract
2 eggs and 1 yolk
3/4 cups flour
1/2 teaspoon salt
1/2 cup unsweetened cocoa powder
3/4 cup semi-sweet chocolate chips
14 Oreos
Instructions
Start by preheating your oven to 350 degrees and get out a 9x9 metal cooking tin. I covered the tin in aluminum foil and sprayed really well with Pam.
Start on the stovetop and get a saucepan out and melt the butter and a 1/2 cup sugar on medium heat - whisk until completely mixed. The mixture should be hot. Once it’s mixed well and hot, remove from heat.
Now add the oil and vanilla to the hot mixture and whisk well.
In a large mixing bowl, add the eggs, yolk and 1 cup sugar and whisk well.
Next, add your butter mixture to your mixing bowl in thirds, whisking after each addition.
Now, add the flour, salt and cocoa powder and mix just enough where the dry and wet ingredients are mixed - do not over mix!
Next, fold in the chocolate chips and about 7 crumbled cookies. I just loosley crumbled up the Oreos with my hands. Make sure these are folded in and covered by the mix.
Lastly, move the batter to the tin and take the remaining 7 cookies and loosely tear them apart and place them on top. Bake for 30 minutes, then let cool for 2 hours before cutting.
