Easy dinner recipe to throw together with all the yummy Italian flavors. Found this recipe from Cooking with Libby!
Ingredients
Package of chicken breast tenderloins (pound or a little more)
1/2 cup Italian style bread crumbs
1/2 teaspoon ground pepper
1/2 teaspoon dried oregano
1/2 teaspoon paprika
6 tablespoons melted butter
1/2 cup shredded mozzarella cheese
24 ounce jar of spaghetti or marinara sauce (I used a local sauce from Pete’s Place in Oklahoma)
Instructions
Preheat oven to 350 degrees. Spray a 9x13 glass dish with olive oil spray.
Spread the entire jar of marinara sauce in the casserole dish.
In a small bowl, spread the bread crumbs, parmesan, oregano, paprika and pepper. Mix well. In a separate small bowl, melt your butter by itself.
Start dipping. Dip your chicken in butter and make sure its fully coated, then dip in bread mixture and make sure it’s coated. Place in casserole dish and repeat.
Once all of your chicken is in the casserole dish, you can sprinkle the remainder of the bread mixture on the chicken.
Bake for 45 minutes, the sprinkle the mozzarella cheese on top of the chicken and bake for another 15 minutes.
