There’s nothing like southern chicken fried steak. To make this dish even easier to make and eat, make it into steak fingers! This is the Pioneer Woman’s recipe and it’s oh so good!
Ingredients for Steak Fingers
First shallow bowl: 2 cups flour, 2 teaspoons seasoned salt, 3/4 teaspoon paprika, 1/2 teaspoon cayenne pepper
Second shallow bowl: 1 1/2 cups milk, 3 eggs
3 pounds cube steak cut into strips, salt and pepper each side
In cast iron skillet: 1/2 cup vegetable oil, tablespoon of butter
Ingredients for Country Gravy
1/4 cup hot grease from your steak finger pan
1/3 cup flour
3-4 cups milk
1/2 teaspoon seasoned salt
Freshly ground pepper
Instructions
Start by making an assembly line with your milk bowl, flour bowl and leave a clean plate to the side to place your coated steak fingers on.
Take a raw steak finger, dip in the flour mixture then dip in the milk/egg mixture. Dip the steak finger back in the flour mixture and set on the plate - dry/wet/dry. Repeat with the rest of the steak fingers.
To cook the steak fingers (cook around 7 at a time), heat your oil in a cast iron skillet on medium high heat and cook on each side for 3 minutes. When done, set on a plate with a paper towel and cover with aluminum foil as you cook the rest of the steak fingers so the cooked steak fingers stay warm.
For the gravy (make in the same cast iron skillet), starting with the milk and grease whisk constantly then add the rest of your ingredients and continue to whisk. As you stir, add extra milk or flour until you reach the consistency you like. We like our gravy thick so added extra flour.
Serve up your steak fingers with mashed potatoes and gravy and a veggie! Enjoy!
