Sugar Cookies with Buttercream Icing (Simpson Donut Cookie)

These sugar cookies are seriously the best! This is my mom’s recipe and she always makes them around Christmas time, but why wait for that? Pick out a cute cookie shape and make a bright icing and these cookies are perfect for a summer birthday or get together!

Ingredients

  • 3 cups flour

  • 2 tsp. Baking Powder

  • 1 tsp. Baking Soda

  • 1 cup shortening

  • 2 eggs

  • 1 cup sugar

  • 4 tablespoons milk

  • 1 and 1/2 teaspoons vanilla

  • 1 teaspoon butter flavoring (don’t skip!)

  • Icing: 1 stick softened salted butter, 2 and 1/2 cups powdered sugar, 1/8 cup milk, food coloring and sprinkles.

Instructions

  • Sift the flour, baking powder and baking soda together in a large bowl. Then add the rest of the ingredients and stir really well.

  • Roll out the dough in a flat surface (you may need some flour so it doesn’t stick to you or the rolling pin).

  • Next, cut into your favorite cookie shape and keep rolling and cutting until the dough is gone.

  • Place cookies on cookie sheets with parchment paper and cook on 400 degrees for 8 minutes. Let cool before icing.

  • For your icing, mix all ingredients in your stand mixer until the icing forms stiff peaks.

  • Move icing to a shallow bowl and use food coloring to color your icing. I used Wilton’s Rose Pink Gel Food Color. I dipped a knife in the food coloring then added it to my icing and stirred the icing until it was a pretty pink color.

  • Next, pop your icing into a microwave for about 30 seconds so it is a thinner consistency and start dipping your cookies into the frosting. If you use sprinkles, sprinkle immediately. Let icing set and the cookies are ready!
