Vegetable Pizza

If you are having a small get together or need a quick lunch, whip up this pizza with croissant dough!

Ingredients

  • Crescent roll dough

  • 1 block softened cream cheese

  • 1/2 cup mayo

  • 1/2 packet dry ranch dressing

  • 1 head of chopped raw broccoli

  • 1/4 cup shredded carrots

  • A mix of chopped red, orange and yellow peppers

  • 1 cup of shredded cheddar cheese (I always grate my own cheese because it tastes so much better)

Instructions

  • Preheat oven to 375 degrees and rollout flat on a sheet pan. Pinch the triangles together so it’s one flat piece. Bake for 12 minutes then let cool.

  • In a mixing bowl, mix the softened cream cheese, mayo and dry ranch dressing and mix well. Spread on the top of the baked, cooled crescent roll sheet.

  • Next, add all the vegetables and top with cheese.

  • Now you have two options - a cool pizza or a warm pizza. I‘ve had it both ways and it is great both ways.

  • For a cool pizza - chill in the refrigerator for an hour then slice and serve.

  • For a warm pizza - broil the top in your oven so the cheese melts. You have to watch this closely because the crescent roll sides can burn if you don’t watch it.
